Ingredients

  • 4 eggs
  • 4 tomatoes, grated, or 1 can chopped tomatoes
  • 1 bell pepper, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 1 tsp paprika and 1 tsp cumin
  • Chili flakes, to taste
  • Salt, black pepper and olive oil

How to make it

  1. Heat olive oil in a pan and sauté the onion and bell pepper until softened.
  2. Add the garlic and cook for 1 minute until fragrant.
  3. Add the tomatoes, paprika, cumin, chili, salt and pepper and simmer for 10 minutes.
  4. Make small wells in the sauce and crack the eggs into them.
  5. Cover the pan and cook on low heat until the eggs reach your preferred doneness.
  6. Serve hot straight from the pan with fresh baladi bread.
