Ingredients
- 4 eggs
- 4 tomatoes, grated, or 1 can chopped tomatoes
- 1 bell pepper, diced
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 1 tsp paprika and 1 tsp cumin
- Chili flakes, to taste
- Salt, black pepper and olive oil
How to make it
- Heat olive oil in a pan and sauté the onion and bell pepper until softened.
- Add the garlic and cook for 1 minute until fragrant.
- Add the tomatoes, paprika, cumin, chili, salt and pepper and simmer for 10 minutes.
- Make small wells in the sauce and crack the eggs into them.
- Cover the pan and cook on low heat until the eggs reach your preferred doneness.
- Serve hot straight from the pan with fresh baladi bread.
