Falafel (Taameya)

Ingredients
- 2 cups dried split fava beans, soaked overnight
- 1 large bunch fresh coriander
- 1 bunch parsley
- 1 medium onion
- 4 cloves garlic
- 1 tsp cumin and 1 tsp ground coriander
- 1 tsp baking powder
- Sesame seeds, for coating
- Salt, black pepper and oil for frying
How to make it
- Drain the soaked beans and process with the coriander, parsley, onion and garlic into a smooth paste.
- Add the cumin, ground coriander, salt and pepper and mix thoroughly.
- Let the mixture rest in the fridge for 30 minutes, then stir in the baking powder just before frying.
- Shape the mixture into small patties and coat them in sesame seeds.
- Heat the oil well and fry the patties until golden brown and crisp outside.
- Serve hot with tahini, salad and baladi bread.
