Shepherd's Pie

Ingredients
- 500g ground lamb
- 1 large onion, chopped
- 1 carrot, diced small
- 1 cup frozen peas
- 2 tbsp tomato paste
- 1 cup beef or lamb stock
- 1 tsp dried rosemary
- 6 large potatoes, peeled and boiled
- 3 tbsp butter
- 1/2 cup milk
- Salt and black pepper
How to make it
- Sauté the onion in a little oil until soft, add the ground lamb and cook until browned.
- Add the carrot, tomato paste, stock, rosemary, salt and pepper, and simmer gently for 15 minutes.
- Stir in the frozen peas at the end, cook for 2 minutes, then pour the mixture into a baking dish.
- Mash the boiled potatoes with butter, milk and salt until smooth.
- Spread the mashed potato evenly over the meat layer all the way to the edges, then rough up the top with a fork.
- Bake at high heat for 20 minutes until the top is golden and crisp.
