Seafood Paella

Ingredients
- 2 cups paella or short-grain rice
- 300g peeled shrimp
- 300g mussels
- Calamari rings (optional)
- A pinch of saffron threads, soaked in a little warm water
- 1 large onion, chopped
- 1 red bell pepper, sliced
- 2 tomatoes, grated
- 4 cloves garlic, chopped
- 4 cups fish or chicken stock
- Olive oil, salt and black pepper
- Lemon wedges, to garnish
How to make it
- Heat olive oil in a paella pan and sauté the onion, pepper and garlic until softened.
- Add the grated tomatoes and cook until slightly reduced.
- Add the rice and stir into the sauce for 2 minutes until it takes on the color.
- Pour in the hot stock and soaked saffron over the rice, spreading it evenly without stirring again.
- Simmer over medium heat for 10 minutes, then lower the heat and cook for another 10 minutes.
- Arrange the shrimp, mussels and calamari over the rice and cover until the seafood is cooked through.
- Let the paella rest covered for 5 minutes and serve with lemon wedges.
