Ingredients

  • 2 cups Egyptian rice
  • 3 loaves stale baladi bread, cut into squares
  • 500g beef (shank or stew cuts), boiled and sliced
  • Oil, for frying
  • 6 cloves garlic, crushed
  • 1 tbsp vinegar
  • 2 cups tomato sauce
  • Salt, black pepper and cumin

How to make it

  1. Fry the stale bread squares in hot oil until golden and crunchy.
  2. Boil the beef with an onion and spices until tender, keeping the broth.
  3. Cook the rice normally and set aside.
  4. Fry the garlic in a little oil, then add the vinegar and tomato sauce; simmer for 5 minutes.
  5. Arrange the fried bread on a serving plate, top with the rice and a ladle of the beef broth.
  6. Pour the garlic-vinegar tomato sauce over the rice, top with the sliced beef and serve hot.
