Ingredients

  • 2 small baguettes or crusty rolls
  • 200g grilled or pan-fried chicken breast, sliced
  • Carrot and daikon radish, julienned and pickled in vinegar and sugar
  • Cucumber, cut into long thin strips
  • Fresh coriander and green chili
  • 2 tbsp mayonnaise
  • 1 tbsp soy sauce
  • Salt and black pepper

How to make it

  1. Mix the carrot and radish with vinegar, sugar and a pinch of salt and let them pickle for at least 10 minutes.
  2. Season the chicken slices with soy sauce, salt and pepper and grill or pan-fry until cooked.
  3. Slice the bread open lengthwise and spread mayonnaise inside.
  4. Layer the chicken slices in the bread, then top with the pickled carrot, radish and cucumber.
  5. Add coriander and green chili, close the sandwich and serve right away.
