Ingredients
- 2 small baguettes or crusty rolls
- 200g grilled or pan-fried chicken breast, sliced
- Carrot and daikon radish, julienned and pickled in vinegar and sugar
- Cucumber, cut into long thin strips
- Fresh coriander and green chili
- 2 tbsp mayonnaise
- 1 tbsp soy sauce
- Salt and black pepper
How to make it
- Mix the carrot and radish with vinegar, sugar and a pinch of salt and let them pickle for at least 10 minutes.
- Season the chicken slices with soy sauce, salt and pepper and grill or pan-fry until cooked.
- Slice the bread open lengthwise and spread mayonnaise inside.
- Layer the chicken slices in the bread, then top with the pickled carrot, radish and cucumber.
- Add coriander and green chili, close the sandwich and serve right away.
