Ingredients
- 500g chicken breast, sliced
- 3 tbsp green curry paste
- 1 can coconut milk (400ml)
- 1 cup chicken stock
- Small eggplant or zucchini, chopped
- Red chili, sliced
- 1 tbsp fish sauce
- 1 tsp brown sugar
- Thai basil (or regular basil) and white rice, to serve
How to make it
- Heat a spoonful of the thick coconut milk in a pot and fry the green curry paste for 2 minutes until fragrant.
- Add the sliced chicken and stir until it changes color.
- Pour in the rest of the coconut milk and the stock and bring to a gentle simmer.
- Add the eggplant, chili, fish sauce and brown sugar, and cook until the vegetables are tender.
- Stir in the basil at the end and serve hot with white rice.
