Stuffed Vine Leaves

Ingredients
- 40 fresh or brined grape (vine) leaves
- 2 cups Egyptian rice, rinsed
- 1 bunch parsley, finely chopped
- 1 bunch dill, finely chopped
- 3 tomatoes, grated
- 1 tbsp tomato paste
- 1/2 cup olive oil
- Juice of 2 lemons
- Salt, black pepper and cumin
How to make it
- If using brined leaves, blanch them 1 minute in boiling water, drain and rinse in cold water.
- Mix the rice with parsley, dill, grated tomatoes, tomato paste, olive oil and spices.
- Lay each leaf flat, add a teaspoon of filling in the center and roll tightly from the bottom up.
- Line a pot with a few spare leaves and arrange the rolls snugly inside.
- Cover with water and lemon juice, and place a heavy plate on top to keep the rolls from unrolling.
- Simmer gently for 45 minutes until the rice is fully cooked.
