Ingredients

  • 2 portions fresh or dried ramen noodles
  • 6 cups chicken or pork bone broth
  • 3 tbsp miso paste
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 clove garlic and a piece of ginger, minced
  • 200g sliced roasted pork or chicken (chashu-style)
  • 2 soft-boiled eggs, halved
  • Spring onion and nori (seaweed), to garnish

How to make it

  1. Heat the sesame oil in a pot and fry the garlic and ginger until fragrant.
  2. Add the broth and bring to a simmer, then whisk in the miso paste and soy sauce until fully dissolved.
  3. In a separate pot, cook the ramen noodles according to package instructions, then drain.
  4. Divide the noodles among serving bowls and ladle the hot broth over them.
  5. Arrange the sliced meat and halved eggs on top.
  6. Garnish with spring onion and nori and serve immediately.
