Ingredients
- 3 fresh or pasteurized eggs, separated (important since this recipe is uncooked)
- 1/2 cup sugar
- 250g mascarpone cheese, at room temperature
- 1 cup cold espresso coffee
- 24 ladyfinger biscuits
- 2 tbsp cocoa powder for dusting
- 1 tsp vanilla extract (optional)
How to make it
- Separate the egg yolks from the whites into two bowls
- Whisk the yolks with sugar until pale and creamy
- Fold in the mascarpone gently until smooth
- Whisk the egg whites to stiff peaks and fold gently into the mascarpone mixture
- Quickly dip each ladyfinger in coffee (do not soak) and arrange in a dish
- Spread a layer of the mascarpone cream over the biscuits, repeat the layers
- Cover and refrigerate for at least 4 hours, dust with cocoa before serving
