Molokhia with Chicken

Ingredients
- 500g fresh or frozen molokhia leaves, finely chopped
- Half a chicken, cut up, or 4 chicken thighs
- 6 cups chicken stock
- 6 cloves garlic, crushed
- 1 tbsp dried ground coriander
- 1 tbsp ghee or oil
- Salt and black pepper
- Egyptian flatbread and rice, to serve
How to make it
- Boil the chicken in water with an onion and a bay leaf until cooked; keep the stock.
- Add the chopped molokhia to the hot stock and simmer gently for 10 minutes.
- In a small pan, fry the garlic and dried coriander in ghee until fragrant.
- Pour the garlic tarna over the molokhia, stir well and let it simmer a few more minutes.
- Serve the molokhia alongside the boiled chicken with white rice.
