Ingredients
- 1.5 cups red lentils, rinsed
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 medium carrot, diced
- 1 tbsp ground cumin
- 1 tbsp butter or ghee
- 6 cups water or vegetable stock
- Salt and black pepper to taste
- Juice of half a lemon
How to make it
- Melt the butter in a pot and sauté the onion until translucent
- Add garlic and carrot and stir for a minute
- Add the lentils and water, bring to a boil
- Lower the heat and simmer for 25-30 minutes until lentils fall apart
- Blend with an immersion blender until smooth
- Stir in cumin, salt and pepper, and heat through for 2 more minutes
- Serve hot with a squeeze of lemon and crispy bread
