Ingredients

  • 1.5 cups red lentils, rinsed
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 medium carrot, diced
  • 1 tbsp ground cumin
  • 1 tbsp butter or ghee
  • 6 cups water or vegetable stock
  • Salt and black pepper to taste
  • Juice of half a lemon

How to make it

  1. Melt the butter in a pot and sauté the onion until translucent
  2. Add garlic and carrot and stir for a minute
  3. Add the lentils and water, bring to a boil
  4. Lower the heat and simmer for 25-30 minutes until lentils fall apart
  5. Blend with an immersion blender until smooth
  6. Stir in cumin, salt and pepper, and heat through for 2 more minutes
  7. Serve hot with a squeeze of lemon and crispy bread
