Ingredients
- 2 cups Egyptian short-grain rice
- 1 cup black lentils, soaked
- 1 cup small pasta (elbow macaroni)
- 1 cup vermicelli noodles, broken up
- 1 cup cooked chickpeas
- 3 large onions, thinly sliced (for frying)
- Flour, for dusting the onions
- Vegetable oil, for frying
- Tomato sauce with garlic and vinegar (dakka)
How to make it
- Simmer the lentils until half-tender, then add the rice and cook together until both are done.
- In a separate pot, boil the pasta and vermicelli until tender; drain.
- Toss the sliced onions in flour and deep-fry in hot oil until golden and crisp.
- Make the sauce: blend tomatoes with crushed garlic, vinegar and a pinch of chili.
- Layer rice and lentils in a bowl, then top with pasta, vermicelli and chickpeas.
- Pour the garlicky tomato sauce over everything, scatter the crispy onions on top and serve hot.
